Double Peanut Butter Cookies
Soft, with a tender bite, the oatmeal and peanut butter combo makes a perfect afternoon snack. Or breakfast...
Adapted from Liv Life's Peanut Butter Oatmeal Candy Cookies
1 1/4 cups all purpose flour
1 cup oatmeal
1 tsp baking soda
1/4 tsp salt
1 cup creamy or crunchy peanut butter (we prefer creamy)
6 Tbs unsalted butter, softened (we use Earth Balance Buttery Sticks)
1/2 cup light brown sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
1 1/2 cups Trader Joe's Mini Peanut Butter cups (or more if desired!)
Preheat oven to 350ºF and line a two baking sheets with silicone mats or spray lightly with cooking spray.
In a medium bowl whisk together the flour, oatmeal, baking soda and salt. Set aside.
In
the bowl of a stand mixer, place the brown sugar, granulated sugar,
butter and peanut butter. Mix on medium speed until blended and
fluffy. Scrape the sides of the bowl as needed, then add the egg and
vanilla, mixing another 30 seconds or so to combine.
Remove
the bowl from the stand and add the flour mixture. With a wooden
spoon, mix until nearly combined. Add the mini peanut butter cups and
continue mixing to evenly distribute.
Scoop spoonfuls (ours were about 2 Tbs)
of the dough onto the prepared cookie sheet and bake for 8-10 minutes or
until lightly browned on top. Allow to cool on the baking sheet for a
few minutes, then remove to a wire rack to finish cooling... if they
last that long!
