Versatile to what ingredients you have on hand, you can substitute whole wheat flour for the oat and spelt, or simply use 100% All-Purpose if you would prefer. Add cinnamon if your kids are cinnamon fans, or perhaps vanilla sugar for extra vanilla flavor. 2 1/2 cups all-purpose flour
1 cup oat flour
1 cup spelt flour
1/2 cup ground flax meal
1 Tbs brown sugar (or granulated sugar, or vanilla sugar)
1 Tbs +1 tsp baking powder
1/2 tsp salt
2 tsp cinnamon (optional)
Mix all ingredients together and store in an airtight container.
For pancakes:
1 1/4 cups DIY Mix
1 egg
1 cup milk (or milk alternative)
1 Tbs oil (we use avocado oil)
1 tsp vanilla extract
Place all ingredients into a mixing bowl and whisk gently just until blended.
Heat a griddle to medium to medium/high heat, and lightly butter the pan. Pour pancake mix onto the griddle. When bubbles begin to appear, flip the pancakes. After a minute or two remove the pancakes to a plate. Proceed as above until all batter is used.
Top with fruit and nuts of your choice and drizzle with maple syrup or agave.
Makes about 6 four-inch pancakes.
For waffles:
